- A medium zucchini for two people
- Small package ground beef
- Cooked rice
- Taco seasoning
- Salt and pepper
- Grated carrot
Slice zucchini in half lengthwise and hollow out seeds with spoon.
Chop a medium onion and fry it up. Add ground beef. When beef is almost done, add chopped garlic and a sprinkle of taco seasoning.
On parchment paper, line up zucchini halves, fill with ground beef mixture. Top with a sprinkle of cheese and grated carrot.
Bake at 400F until zucchini is soft, around 15 min.
