Stuffed zucchini with side salad

Stuffed zucchini

  •  A medium zucchini for two people
  • Small package ground beef
  • Cooked rice
  • Onion
  • Garlic
  • Taco seasoning
  • Salt and pepper
  • Grated carrot
  • Cheese

Slice zucchini in half lengthwise and hollow out seeds with spoon.

Chop a medium onion and fry it up.  Add ground beef. When beef is almost done, add chopped garlic and a sprinkle of taco seasoning.

On parchment paper, line up zucchini halves, fill with ground beef mixture. Top with a sprinkle of cheese and grated carrot.

Bake at 400F until zucchini is soft, around 15 min.

 

Side salad

  • Salad greens
  • Cucumber
  • Tomato
  • Whatever!

Dressing:

equal amounts oil, vinegar and honey

salt and pepper to taste
